It has been way too long since I went grocery shopping and my kids were begging for dessert last night. What's a mom to do? I took a look around my cabinets and made my own little mini pineapple crisp.
- 1 can crushed pineapple
- 2 tablespoons brown sugar (mixture)
- 1/2 cup oatmeal (I used old fashioned oats)
- 2 tablespoons brown sugar
I mixed the can of crushed pineapple with the 2 tablespoons of organic brown sugar, I then scooped it into cupcake liners in a cupcake tin. I then covered it with oatmeal and more brown sugar and baked it at 350 degrees for 30 minutes.
They were a huge hit with the entire family! They are even eating them cold today!
