Keto Cheeseburger Soup Recipe
Cheeseburgers have always been a comfort food in our house. When making the switch to a keto way of eating one of the first things I did was figure out a way to make my favorite foods low carb so I could still enjoy them. With the cold weather and my lack of wanting to stand outside in the cold to grill I thought it was the perfect time to come up with a cheeseburger soup recipe.
Loaded with ground beef, bell peppers, onions and Rotel in a cheesy soup it was the perfect comfort meal and totally hit the spot.

Is Cheeseburger Soup Keto Friendly?
Traditionally cheeseburger soup has potatoes which makes it not keto friendly, but this tasty keto soup recipe is totally keto friendly. With only grams of carbs per serving this keto soup is high in fat, low in carbs while being filling.
Variations of this recipe
- Change up the meat. If you are not a fan of ground beef you can use ground chicken or ground turkey. If you are using ground chicken or ground turkey you will also want to use chicken broth or turkey broth instead of beef broth.
- Change up the toppings. I like adding more shredded cheese and sour cream but you can also add cooked bacon on top to make it a bacon cheeseburger soup.
- Use a different cheese. You need to use the cream cheese for the creamy base, but in place of the cheddar cheese, you can use other cheeses like pepper jack, white cheddar, or Monterey Jack cheese.
- Add more veggies. If you want to add more veggies you totally can, celery, and carrots are great additions. You can also add some riced cauliflower if you would like to have it on the thicker side, thaw a bag of frozen cauliflower rice and add it to the pan while you are cooking the ground meat.
Tips for making this homemade soup recipe
Leave the meat in bigger chunks. For some soup you want to have tiny pieces of meat, this is not one of those soups. You want to have smallish chunks of meat, but teeny tiny pieces and crumbles. I find it is best to use a wooden spoon when cooking the ground beef and then chop it up as it cooks.
Shred your own cheese. While bagged shredded cheese makes things easier shredding your own cheese means you won’t have the addictives that they use so the shredded cheese in a bag doesn’t stick together. Shredded fresh cheese also melts better when you are cooking with it.
Use a food processor to chop the veggies. If you don’t enjoy chopping veggies the traditional way take a short cut and put them in a food processor and give them a quick pulse and it is a huge time saver.
What toppings Can I put on cheeseburger soup?
When we serve it we like to top the soup with more shredded cheddar cheese, sour cream, and scallions This is optional for the recipe but a must in our house. Sometimes we add some cooked bacon on top too. You can also add chopped pickles or chives on top too!
What to Serve with Keto Cheeseburger Soup
This hearty soup is filling but if you are looking for sides salad or a keto biscuit is perfect. Personally, I like using a keto cheddar biscuit to soak up some of the leftover soup broth that is in the bottom of the bowl. It tastes sooo good!
How to store Keto Cheeseburger Soup
Allow the soup to cool completely and then place in an airtight container in the fridge. It will keep for 3-4 days as long as it is stored properly. To reheat I suggest doing it in a pot on the stove over medium low heat as it will thicken in the fridge because of the cream cheese.
Can I freeze Keto Cheeseburger Soup?
Because the soup has cream cheese in the soup I do not like to freeze it. The cream cheese breaks down and gets a bit chunky when frozen.

- 1 pound ground beef
- 1/2 cup green pepper diced
- 1 small onion diced
- 8 ounces cream cheese
- 10 ounce can Rotel
- 32 ounces beef stock
- 1 teaspoon garlic powder
- salt to taste
- pepper to taste
- 1 cup cheddar cheese
How to Make Keto Cheeseburger Soup
Brown the beef in a medium stockpot over medium heat, once browned remove the beef from the pot, and drain it on a plate lined with paper towels.
Add the oil to the bottom of the pot with the pepper and onion, cook until they are softened.
Stir in the cream cheese until it has softened.
Add in the browned beef, Rotel, beef stock, garlic powder, salt, and pepper. Bring the soup up to a boil then cover and reduce it to low for 20 minutes.
Right before serving stir in the cheddar cheese.
Pour into serving bowls and serve.
