Zucchini noodles, also known as zoodles, are a type of vegetable pasta made from spiralized zucchini. No, they are not made with any pasta, but the spaghetti-like strands of zucchini that come when you use a spiral slicer made it look just like spaghetti noodles.
Spiralized zucchini noodles are a popular low-carb and keto-friendly alternative to traditional pasta noodles. because the flavor of the zoodles is mild, they are a good choice to have with your favorite pasta recipes. You can enjoy what you love but still, eat healthily.

No zucchini noodles do not have the same flavor as regular pasta. They don’t have that tender bite to them and there is almost no flavor except for what you add to them. However, this zoodles recipe is a great choice because they take on the flavor of the sauce and it lets you get close to eating that pasta dish you love.

Is zucchini noodles a carb?
Zucchini isn’t a carb the way people think of a carb. Most people think of a carb that is made from wheat, rice or oats. Zucchini is considered a vegetable, although it does still have carbs. A zucchini has a total of 3.3 grams of carbs and 1.5 of those are fiber. This means that a zucchini has only 1.8 grams of net carbs which is not a lot.
When you compare that to a regular pasta noodle, it has about 40 grams of carbs with 2-3 grams of fiber. This means that a regular pasta noodle has around 37 grams of net carbs. That is why zucchini isn’t thought of as a carb.
How do you make zucchini noodles not soggy?
The best way to make sure the zucchini noodles are not soggy is to cook them the right way. While there are a lot of ways to cook them, cooking them in the oven will make sure they are not soggy.
More things to do so that the zoodles are not watery is to make sure you pat them dry after spiralizing and also to salt them. This will help to draw out some of the water from the zucchini so that they are not as soggy.
How do you serve Zoodles?
You serve zoodles just like you would flour pasta. With your favorite sauce or just some butter. My favorite way to enjoy Zoodles is some butter, parmesan cheese, and a few red pepper flakes, however, anything you put on normal flour pasta will work on your zucchini spaghetti!
I have a lot of different sauces that I like to put on my zoodles, so be sure to check them out or you can use your favorite spaghetti sauce.

Tips for making Zucchini Noodles
- When making Zoodles I use one medium zucchini per person who will be eating. I also recommend using medium size zucchini because the large zucchini has more seeds and do not spiralize well.
- Use a spiralizer. You do not need to buy a super fancy spiralizer. This is the Zoodle spiralizer I use in my kitchen, it works perfectly for my needs. It creates a fun shape that reminds the kids of noodles and the eat them up! They have fancy ones like this one that would be good if you going to be using it a lot.
- Use Fresh zucchini. Frozen zucchini doesn’t work to make zoodles, you need to use fresh zucchini.
- Use a sharp knife. When you are cutting the ends of the zucchini off you will want to use a sharp knife.
How to Store Leftovers
Allow the zucchini noodles to cool completely and then store in an airtight container in the fridge.

Once frozen place in an airtight container or a freezer bag and store in the freezer.
