Keto Asparagus Stuffed Chicken Ingredients
- Boneless skinless chicken breasts. You will want 2 large chicken breasts.
- parmesan cheese. I like to use fresh grated but you can use the pregrated parmesan cheese.
- Fresh asparagus. You can use frozen but we prefer to use fresh asparagus.
- Seasonings. We got simple for the seasonings but the combination gives the perfect flavor. You will need, goya all-purpose seasoning, ground cumin and black pepper.
How to Make Keto Asparagus Stuffed Chicken
Spray a baking dish or baking sheet with nonstick cooking spray.
Wash the asparagus stalks and set aside.
Preheat oven to 375° in line a sheet pan with aluminum foil.
Cut the woody ends off the stems of the asparagus.
Cut each of the boneless chicken breasts in almost half, leaving a small portion of it still connected to create a butterflied chicken breast.
Place each piece of chicken onto the sheet pan (you can also use a baking dish) so they are open. Sprinkle the parmesan cheese onto each chicken breast and place the asparagus on top of the cheese.
Roll the chicken up rolling from the pastor side into the clean side so you’ll end up with the goodness in the middle of the chicken roll.
Place the chicken seam side down.
In a small bowl add the black pepper, grounded cumin, goya all-purpose seasoning and mix well with a fork.
Sprinkle the top of the chicken with the goya, cumin, and pepper.
Place chicken in the preheated oven and bake until the chicken internal temperature reaches 165° which should take about 40 minutes.
Allow the chicken to rest a few minutes before serving.
