Crack chicken soup is called crack chicken because it is so addictive. It is a combination of shredded chicken, bacon, cheese and ranch powder. It is most popular for being made into a dip but with this soup, you are going to be full and satisfied with your dinner.
What to Serve with Chicken Bacon Ranch Soup
This hearty soup is filling and is pretty much a meal all on its own. However, if you are looking for something to serve alongside it, I suggest a green salad or some bread. Since you are eating low carb, you can make chaffles or cheese biscuits, which are my favorite. Personally, I like using a keto cheddar biscuit to soak up some of the leftover soup broth that is in the bottom of the bowl. It tastes sooo good!
Tips and Variations for Chicken Bacon Ranch Soup
- You want to be careful this soup isn’t too salty. Between the bacon, ranch seasoning, and chicken broth. The way I handle that is to use low sodium chicken broth. If that is still too much sodium, you can also use water. I also do not add any extra salt to the soup.
- Dry Ranch dressing mix. You can also make homemade ranch seasoning mix. Whenever you make something from scratch, you can control the salt in it and this is a simple way.
- Add veggies. If you want to add veggies to this soup you totally can. Add them when you are cooking the chicken to have them cook with the chicken. Some great veggies to add are fresh spinach, mushrooms, celery, and bell peppers. You can also add some riced cauliflower if you would like to have it on the thicker side, thaw a bag of frozen cauliflower rice and mix it into the soup when it is done cooking. You can also make homemade cauliflower rice to add into the soup.
- Change up the cheese. I like using sharp cheddar but you can also use a white cheddar or Monterey Jack cheese.
- Shred the cheese yourself. It is important that you use a block of cheese and shred it yourself to avoid any of the additives that are used to make preshredded cheese not stick together. Pre Shredded cheese also doesn’t melt as well as a block of cheese that you shred yourself.
- Add more bacon. If you want to add more bacon feel free to add a few more slices of bacon into instant pot when you are cooking the chicken. I also am a firm believer that there is no such thing as to much bacon, so you can add as much crispy bacon on top of the soup as you want to when serving it.
How to Store Chicken Bacon Ranch Soup
I love to make a large batch of this soup so that I always have leftovers. The leftover soup will keep in the refrigerator for 3 to 4 days when you store it in an airtight container. When you are storing the soup, wait for it to cool completely. Once cooled, move it to an airtight container. You can use plastic tupperware-style containers or a freezer bag.
Can I Freeze Crack Chicken Soup?
Yes, you can freeze this soup! I love to make a big batch and then freeze it into individual portions for an easy lunch or dinner.
To freeze the soup, let it cool completely. Once cooled, portion it into freezer-safe bags or containers. Freeze for up to 3 months. When you are ready to eat the soup, let it thaw in the refrigerator overnight.
The soup might have separated when it was frozen because of the dairy. You will need to mix it well as it reheats. Reheat the soup on the stove over low heat until warmed through. You may need to add a little bit of chicken broth or water to thin it out as it reheats.
Chicken Bacon Ranch Soup Ingredients
- 2 pounds boneless skinless chicken breasts
- 2 pieces bacon uncooked
- 8 ounces cream cheese
- 1 ounce dry ranch seasoning mix
- 10 ounces Rotel Original Tomato Diced Green Chili
- 3 cups chicken broth
- 2 cups sharp cheddar cheese shredded
- 4 pieces bacon cooked and chopped
- 2 green onions sliced
How to Make Chicken Bacon Ranch Soup
Place the raw chicken breast into your instant pot and cut 2 pieces of raw bacon in half and place on top of the chicken breasts.
Add in the cream cheese, ranch seasoning, Rotel, and the chicken broth.
Place the lid on your pressure cooker and set to manual high for 15 minutes with 10 minutes on natural release time.
While the soup is cooking, cook 4 pieces of bacon (or more if you would like more bacon crumbles on the top of your soup). You can use the stove top method, microwave method or air fryer bacon method to cook the bacon.
Once bacon is cooked, crumble the cooked bacon and set aside. If you are not using pre-shredded cheese, shred your cheese and set aside.
Remove cooked chicken from the instant pot and shred the chicken using 2 forks.
Place the instant pot on sauté high. Using a whisk stir in the cheese until it’s melted.
Add the chicken back into the mixture and turn off the instant pot.
Serve by filling the bowls with soup and topping with the crumbled bacon and additional cheese and the chopped green onions.
