And they’re great for meal prep because you can make a batch ahead of time and reheat them when you’re ready to eat.
You can customize these muffin tin eggs any way that you like. I am using ham and cheese but you can add in veggies like peppers, onions, or spinach as well as using different meats.
Can I Freeze Keto Egg Muffin Cups?
Yes! These egg cups freeze well. After the egg muffin cups have cooled completely, simply place them in a freezer-safe container and store them for up to 3 months. When you’re ready to eat, just reheat in the microwave for a quick and easy breakfast. You can also wrap them individually in plastic wrap and then place them all in a freezer bag and store them in the freezer in individual serving sizes.
How to Reheat
I like to microwave them at 15 second intervals. Depending on the strength of the microwave, it can take up to 45 seconds to reheat these healthy egg muffins. Be careful not to overheat the eggs or they can taste rubbery.

Whatever meat you add to the muffin cups, make sure that you have precooked it. The meat will not cook in the oven.
How Many Carbs are in Keto Egg Muffins
This recipe is very low in carbs. There is no crust to the egg muffins and the other ingredients are ultra low in carbs. While the carb count will vary depending on the type of ham that you use, generally, there is about 1 carb per muffin. This number will also change depending on if you add more things to the recipe like veggies.
Variations of the recipe
Change up the meat. I like using ham but you can change up the meat if you want to and use bacon, steak, sausage. Just be sure to cook the meat before putting it in the egg cups as it will not cook all the way in the oven. If we have a holiday dinner and have ham, then I will use the leftover ham and mix it into the eggs instead of laying the egg muffins with the meat.
Change up the cheese. I like using cheddar cheese but you can use any type of cheese that you want. I also suggest that you shred the cheese yourself instead of buying preshredded cheese. The pre-shredded cheese has an addictive in it so the cheese doesn’t stick together. My favorite cheeses to use aside from cheddar are pepper jack, and Monterey jack cheese.
Change up the veggies. I like using green peppers, and onions but you can change them out and use different colored bell peppers, asparagus, or any other low carb vegetable that you want to.

- 12 eggs
- 1/2 cup green bell pepper diced
- 4 teaspoon onions diced
- 4 teaspoon scallions sliced
How to Make Keto Ham and Cheese Egg Muffin Cups
Preheat the oven to 400 degrees.
Grease the 12 spots in your muffin pan.
Layer two pieces of ham into each muffin tin hole.
Sprinkle the cheese into the bottom of the ham slices.
In a small bowl add the eggs, pepper, and onions together and whisk.
Pour the egg mixture into the ham cups.
Bake in the oven for 15-18 minutes or until eggs are cooked to your liking.
Sprinkle the scallions on the top of the eggs.
Serve or store for later.
