I like to make my own keto taco seasoning. Using my homemade recipe, I know exactly what is in them and I know that it is keto. Many of the store bought ones have additives to preserve it and many times have cornstarch added as well.

If you are lucky enough to have leftovers, they will last for up to 5 days. Once the soup has cooled, place it in an airtight container in the refrigerator. This soup tastes great reheated the next day.
Can You Freeze Taco Soup?
Keto taco soup can be frozen, It freezes beautifully, but you want to freeze it before adding the cream cheese. The cream cheese will break when it is frozen. This can make the soup taste a little grainy.
I like to make a large batch of soup and double the recipe. Half of it I will freeze and half we will eat that night. In that case, right before it is time to add the cream cheese, I will separate half the soup into another bowl. I let this bowl cool completely. In the pot, I add the cream cheese and finish the recipe. Place the cooled soup in a freezer bag and store it in the freezer for up to 6 months.

Change up the meat. I like using ground beef but you can also use ground turkey, ground chicken, or ground venison.
Use homemade taco seasoning. While store-bought taco seasoning is easy to grab it has ingredients in it like preservatives and corn starch that are not low carb or keto friendly so it’s best to use homemade seasoning.
Shred your own cheese. Packaged shredded cheese has ingredients to make it not clump together so it is best to shred your own cheese. Using cheese you shred yourself will also melt better.
Add more spice. If you want this Low Carb Taco soup to have a more spicy kick to it, you can add an additional can of green chilis. I tend to keep things on the low end for spicy in our house because a few of the kiddos are not fans of anything spicy, but it is really easy to add an additional kick to this taco soup recipe. You can also up the amount of chili powder that you add to it.
Keto Taco Soup Recipe Ingredients
- 1 pound ground beef
- 2/3 cup onion about one small onion
- 2 tablespoons minced garlic
- 2 tablespoon taco seasoning
- 10 ounces Rotel with diced tomatoes
- 4 ounces canned diced green chilies
- 4 cups beef broth
- 1/2 teaspoon chili powder
- pinch of salt
- pinch of black pepper
- 8 ounces cream cheese sliced
- 1 cup shredded cheddar cheese
How to Make Keto Taco Soup
In a stockpot over medium-high heat add the ground beef and cook until browned.
Once browned, drain the ground beef and then set it to the side.
Chop the onion into small pieces.
Add the oil to the bottom of the pot with the onion and garlic, cook until they are softened.
Add in the cooked ground beef, taco seasoning, Rotel, green chilies, beef stock, chili powder, salt, and pepper. Bring the soup up to a boil then cover and reduce it to low for 1 hour.
Cut the cream cheese block into small pieces and shred the cheddar cheese.
Right before serving stir in the cream cheese and cheddar cheese until the cheese is incorporated.
Top with extra cheese and sour cream and other taco toppings if desired.
