This easy broccoli slaw is one of our favorite low carb side dishes for the summer. It is easy to prep and has amazing flavor. It makes for a great side dish to make when not everyone in the house is eating low carb like our house.
Broccoli is probably my favorite vegetable, with a close second being asparagus. I love how crunchy broccoli is before it’s cooked, and honestly when I cook it I still don’t get it to the point of being mushy… I like a little crunch! This low carb side dish has the perfect crunch for a cold side dish that pairs so well with so many different main dishes.

I also use this broccoli slaw on top of lettuce to make my low carb pulled pork wraps. It is seriously delicious!
Tips for Making this Recipe
Serve chilled for best flavor. You can serve this recipe immediately at room temperature. However, for best results, cover and place in the refrigerator for a couple hours (or overnight) to give the flavors a chance to combine.
Tip for keeping broccoli crisp. To keep your broccoli fresh and crisp, store it in your vegetable crisper, unwashed in a perforated bag, and try to use within a few days.
Change things up. I use a bag of broccoli slaw that you find in the fridge section of the grocery store to make things super easy. If you are wanting to use non bagged produce then you can use a combination of broccoli, carrots and cabbage all thinly sliced.
Store in the fridge. Any leftovers you have need to be stored in the fridge. They will keep for 2-3 days as long as they are stored in an airtight container.

- 11.5 ounce bag organic broccoli slaw
- 1/4 cup parsley leaves
- 2 tablespoons avocado oil mayo
- 1 tablespoon apple cider vinegar
- 1 teaspoon whole celery seed
- salt
- pepper
How to Make Low Carb Broccoli Slaw
Add broccoli slaw, parsley, avocado oil mayonnaise, cider vinegar, and celery seed to a large glass or other non-reactive bowl and stir to combine. Season with salt and black pepper, to taste.
Serve immediately or place in the refrigerator for a couple hours to chill, if desired.
