I am so ready for the warm weather to get here. I want to be cooking burgers and steaks on the grill outside, I want to be making easy cold side dishes that I love. And I want the sun shining and us all enjoying the outdoors.
Since we are currently in the cold, I am making summer side dish recipes and enjoying them ahead of time just because I can. This Low carb broccoli salad with bacon is a low carb summer side dish recipe that is worth making now and not waiting for the warm weather to enjoy it!

Tips and Variations of this recipe
Change up the cheese. I like using cheddar cheese but you can also use white cheddar cheese, Monterey jack cheese or pepper jack cheese. I do suggest shredding your own cheese instead of buying pre-shredded cheese because the packaged shredded cheese has additives that make the cheese not stick together in the package.
Change up the nuts. I like using sunflower seeds but if I do not have them on hand I will change them out for chopped walnuts or chopped pecans.
Cook the bacon in the air fryer. Using the air fryer to cook bacon makes it so much easier, and there is a lot less mess. If you do not have an air fryer you can cook the bacon using the stove top method or the oven baked bacon method.
Use fresh broccoli. You do not want to use frozen broccoli with this recipe, you want to use fresh. This recipe calls for 5 cups so you will want 2 large heads of broccoli. You can use a microwave steamer to cook the broccoli but I prefer the stove top boiling water method.

The great thing about broccoli salad is that it goes with so many dishes as the perfect side dish!
From steak kabobs, grilled steak, grilled chicken, and grilled seafood like grilled salmon with avocado salsa, it doesn’t really matter.

- mayonnaise
- sour cream
- white vinegar
- salt
- pepper
- fresh broccoli
- bacon, chopped and cooked
- Red onion, thinly sliced
- Shredded cheddar cheese
- sunflower seeds
How to Make Low Carb Broccoli Salad
Fill a medium pot with water and bring it to a boil.
Add in the broccoli and cook until the broccoli is bright green.
While the broccoli is cooking cook and crumble the bacon and slice the red onion into thin slices.
Drain the cooked broccoli and rinse with cold water to cool down.
In a large bowl mix together the mayonnaise, sour cream, vinegar, salt, and pepper until well combined.
Stir the broccoli, bacon, red onion, cheese, and sunflower seeds into the mayonnaise mixture.
