Easy Low Carb/ Keto Meatball casserole is super simple low carb dinner recipe that is quick to make and one my whole family enjoys. On a busy night when I am tired I want something quick and easy but filling. This Meatball casserole is perfect! Everyone loves it and the kids love helping me make homemade meatballs.

If you are wanting to change up the sauce in this easy ground beef casserole recipe you can. I tend to make large batches of sauce and keep them on hand in the freezer to make things easier.
Meatball Casserole Ingredients
- ground beef
- onion, minced
- garlic, minced
- fresh parsley, chopped
- black pepper
- salt
- egg
- marinara sauce – Low Carb Jarred Sauce like Rao’s or Yo Mommas or use homemade Marinara sauce
- shredded mozzarella cheese
- fresh basil, optional
How to Make Meatballs Casserole
Preheat the oven to 400ºF. Lightly spray your 9×9 casserole dish with cooking spray.
In a large mixing bowl, combine the meat, oil, garlic, parsley, pepper, salt, and egg. Using your hands, mix the meat mixture just until it is all combined.
Divide the mixture into nine equal portions and roll each portion into a ball.
Place the meatballs to the casserole pan. Bake for 15 to 20 minutes or until fully cooked remove from the oven and drain off the grease.
Pour the of the sauce over the meatballs and cover with the mozzarella cheese. Place the pan back in the oven for 5-10 minutes until the cheese is fully melted.

- 1 cup mozzarella cheese shredded
