We saw the mini pancake cereal going crazy on TikTok around the same time as the Keto Dalgona Whipped Coffee went crazy and we knew we had to make mini pancake cereal and make it keto friendly. Who can resist some super cute tiny little pancakes in a bowl? I mean seriously how cute are they! Oh and these low carb pancakes with coconut flour taste delicious too!

This keto pancake cereal recipe is made with coconut flour, however if you have a favorite keto pancakes recipe then you can use that one instead. I just love how the flavors work so well when using coconut flour to make pancakes.
What is Pancake Cereal?
You might not be on TikTok, so you might have missed out on the latest trending food, pancake cereal. Don’t worry now you don’t have to miss out! Essentially pancake cereal is tiny little pancakes, made in the size of pieces of cereal and then served in a bowl and eaten with a spoon just like cereal!
Is it a bit silly? Sure but it is also SUPER fun! The kids loved it! This sugar-free pancake cereal was a great start to our morning when I made it for the kids!
How to Make Pancake Cereal
It is super easy to make Keto pancake cereal.
First make the low carb pancake batter.
Use a ziplock bag with the end cut off or a pastry bag to hold the sugar free pancake mix. I find using a pastry bag works better then a zip lock bag.
Then cook the pancakes on a skillet by squeezing little drops of low carb pancake mix on to the hot griddle.
Add mini pancakes to a bowl and serve as desired.
How to Serve Low Carb Pancake Cereal
You will want to of course put it in a bowl. That is a must and that is a big part of the fun. But you can serve these keto pancakes in a few different ways!
Keto Pancake Cereal with Milk. Add all of the pancakes to a bowl, pour almond milk, or another low carb milk on top and eat like cereal. You can also use half and half or heavy cream.
Add berries. Along with serving with milk, top the low carb pancakes cereal with berries; strawberries, blueberries and blackberries work well. You could get adventurous and add other low carb fruits if you wanted to.
Butter and syrup. Want to go the more traditional pancake route? Add the mini keto pancakes to a bowl and drizzle melted butter and sugar free syrup on top. Personally we prefer the Lakanto Keto Maple syrup when having keto pancakes.
How to Store Pancake Cereal
If you have left overs, store the low carb pancakes in the fridge in an air tight container. They will keep for 3-5 days in the fridge.
Can I freeze Keto Pancake Cereal?
Just like normal keto pancakes you can freeze the keto pancake cereal! Just allow the low carb pancakes to cool completely, then place on a baking sheet in a single layer. Place the baking sheet in the freezer for about an hour to fully freeze the mini pancakes. Once fully frozen transfer to a freezer bag and store in the freezer. They will keep for about 3 months in the freezer.

- coconut flour
- baking powder
- salt
- butter, melted
- heavy cream
- liquid stevia
- eggs
- vanilla extract
How to Make Keto Mini Pancakes Cereal
Preheat a large skillet over medium heat or griddle to around 350ºF.
In a medium mixing bowl whisk together the flour, baking powder and salt together, set it aside.
In another medium mixing bowl stir together the butter, heavy cream, stevia, eggs, and vanilla.
Pour the liquids into the dry ingredients and stir until combined.
Lightly oil the pan.
Pour the batter into a piping bag or ziplock bag, cut a small hole off the bag.
Pipe out small quarter size pancakes on to the pan and cook until the bubbles pop. Flip the pancakes and cook until golden brown.
Once finished cooking all of the sugar free pancake batter into small pancakes serve them as desired.
