I need to have things easy with all the business that we have going on in our house. For the longest time, I was buying the frozen bags of cauliflower and then thought to myself why am I doing this when it is so easy (and much cheaper) to just make it myself.
I really wish I had done it sooner. Not only is it much more budget friendly to make myself but it also tastes so much better.
Making cauliflower rice fresh is just as easy as grabbing a bag of frozen cauliflower rice at the store but it tastes so much better. The great thing about making it is that you need just 1 ingredient, a few minutes of time and then it is ready to be used in your favorite recipes or frozen to use later.
When sticking to a low carb diet or a keto diet keeping the carbs down can be tricky. Riced cauliflower saves the day many times with recipes that normally would have rice. It is also great for those who are wanting to add more veggies to their diets. No it doesn’t taste just like rice, because it is a vegetable but it is a tasty alternative and cauliflower absorbs flavors well just like rice does.
Tips For Making
Only fill the food processor 1/2 way. If you over fill it you will end up with very fine pieces and larger pieces instead of having uniform pieces.
Use fresh cauliflower. I find it best to use a head that I have just bought and it is fresh vs one that has been sitting in the fridge for a while.
How Much Cauliflower Rice does a head of cauliflower make?
When it comes to produce things can differ a bit depending on the size of the produce. A medium sized head of cauliflower will make roughly 4 cups of riced cauliflower.
How to Store
After making it you need to store it in the fridge or the freezer. Fresh cauliflower rice is best used with in 2 days of making it. It will keep in the fridge for up to 4 days, however I prefer using it with in 2 days of making it and having it in the fridge.
If you do not plan on using it right away I do suggest freezing it as it does store better frozen than when in the fridge.
Can I freeze Cauliflower rice?
Yes! I personally like to make a large batch and keep it in the freezer so I have it on hand for when I need it. It takes about 10 minutes for me to do a full head, so I like to do multiple at one time so I can load up the freezer.
After you have processed the cauliflower in the food processor scoop 2 cups worth the cauliflower per bag into quart-sized freezer bags.
Label the bags with the name and the date. It will keep in the freezer for 2-4 months.
How to Cook Cauliflower Rice
If you are not making a specific recipe and you want to eat it fresh by itself after making it, heat olive oil or butter in a pan on the stove, then add the cauliflower rice, a pinch of salt and a pinch of pepper and cook for about 5 minutes.
You can also change up the flavors by adding any of your favorite spices while it is cooking.
Fresh herbs, proteins and other veggies are great things to add in and change it up.

How to Make Cauliflower Rice
Wash the head of cauliflower.
Cut the head into quarters. Remove the core by cutting the center out on an angle.
Cut the sections into florets.
Place some of the florets into the bowl of your blender or food processor so the bowl is half full.
Pulse the blender until the florets are in rice sized pieces.
Place finished product into an air tight container and store it in the fridge, freeze or use in your favorite recipe right away.
