Oh and I should also probably mention that these keto chicken meatballs are ZERO net carbs!
To make these chicken meatballs all you have to do make the meatballs, bake them in the oven and then toss them in the buffalo sauce. Super, super easy!

For us it is a must, even when serving keto buffalo meatballs as a dinner to include celery and ranch dressing or blue cheese. These tasty low carb meatballs taste even better when they are dipped in some dressing!
Can I make these ahead of time?
Yes you can! If you are making them ahead of time you can make them and store them in the fridge before baking or after baking. If you are not baking them right away then they will keep in the fridge for 1 day. If they are already baked then they will keep for 2-3 days.
I suggest making these no carb chicken meatballs and baking them and then storing them in an airtight container. When ready to serve them bake them until they are warm and then toss them in the buffalo sauce.
Can I freeze Buffalo chicken meatballs?
Yes! You can freeze these chicken meatballs either raw or baked. I prefer to freeze them after baking so I can reheat them and easily toss them in the buffalo sauce.
If you are freezing them, bake them on a baking sheet and let cool completely. Once cooled place the baking sheet in the freezer. Once the meatballs are solid remove them from the baking sheet and place in a freezer bag and store them in the freezer.
Can I use ground Turkey?
If you prefer ground turkey over ground chicken you can totally make buffalo turkey meatballs instead.

- 1 pound ground chicken
- 1 egg
- 1/2 cup almond flour
- 1 tablespoon ranch seasoning
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 cup buffalo sauce
How to Make Keto Buffalo Chicken Meatballs
Preheat oven to 400°F. Lightly grease a 9×13 inch pan.
In a large bowl combine the ground chicken, egg, almond flour, ranch, garlic, salt, and pepper together just until combined. Don’t over mix this mixture or you will end up with mush.
Scoop 1 tablespoon of the mixture and roll the mixture into a ball, place it on the sheet pan and repeat this until you have used up all the mixture.
Bake for 11-13 minutes or until they have reached an internet temperature of 160ºF.
Place the buffalo sauce into a large bowl and add in the meatballs, toss until they are well coated. Remove the meatballs from an extra sauce and serve with some blue cheese, scallions, or ranch.
