I love my cauliflower fried rice recipe but wanted to change things up a bit and make a tasty chicken fried cauliflower rice. This cauliflower fried rice has all the Chinese food flavors I love about fried rice but in a healthier low carb dish. Cauliflower is similar to rice in that it absorbs the flavors you put with it, which makes it perfect for making low carb cauliflower rice when you are in the mood for Chinese food.

What is cauliflower rice?
It’s just raw cauliflower that’s been finely chopped so that it resembles rice. You can easily do it in a food processor or you can buy it fresh or frozen.
Tips for Making this Recipe
Make it smoky flavored. Use smoked sesame oil for more flavor.
Make it spicy. If you like it spicy add 1 chopped jalapeno, it won’t add carbs. Use 3 tablespoons of chile sesame oil and leave out the plain sesame oil for a spicier dish
Change up the meat. While I used chicken breasts for this recipe you can use chicken thighs may be substituted for the breast and cooked pork may be substituted for the chicken.
Add extra veggies. If you want to add extra veggies you can, green peas, green beans, red pepper, zucchini are great options for low carb veggies.
Save time by using frozen cauliflower rice. Add it in while it’s still frozen – no need to thaw.
Once you add the cauliflower finish up quickly. It will get mushy if you overcook it.
How many carbs are in chicken fried rice?
Traditional chicken fried rice has about 55 carbs per serving. This low carb version has just 4 net carbs per serving!
Chicken fried rice normally has peas and carrots – why are there none in this recipe?
Peas and carrots are fairly high in carbs so we’re leaving them out of this recipe to keep the carb count low. You can add a few if you like, just remember to adjust the nutrition information. If you are more low carb than keto feel free to add in some peas and carrots.
What low carb ingredient can I substitute for soy sauce?
You can use liquid aminos made from soy protein in place of soy sauce. Don’t use coconut aminos – they have more carbs.
How to Store Chicken Fried Cauliflower Rice
Store in the refrigerator in an airtight container for up to 4 days.
Can I freeze this recipe?
After cooking allow it to cool completely and store in an airtight container or in freezer bags. This recipe freezes well for up to 3 months.
Chicken Fried Cauliflower Rice Ingredients
- 2 tablespoons sesame oil
- 1 tablespoon chile sesame oil
- 1 clove garlic, finely chopped
- 1.5 pounds boneless skinless chicken breast
- ½ cup celery, diced
- ½ cup bell pepper, diced
- 2 ½ cups cauliflower rice – use a whole head of cauliflower and make riced cauliflower with the how to make rice cauliflower to make homemade cauliflower rice.
- ¼ cup green onion, divided use
- 1 ½ tablespoons soy sauce
- 1 tablespoon chipotle in adobo, mashed to a paste
- ½ teaspoon powdered ginger
- 2 eggs

How to Make Chicken Fried Cauliflower Rice
Wash and chop the vegetable and make the riced cauliflower if you are using fresh cauliflower.
Dice the chicken and cook with a little bit of olive oil. Once cooked remove and set aside.
Heat the sesame oil and chile sesame oil in a wok or large skillet until it shimmers on medium-high heat. Once it shimmers it is hot enough, then turn the heat down to medium.
Add the chopped garlic and cook quickly over medium heat – don’t let it brown.
Add the celery and bell peppers. If you are using fresh cauliflower rice add it now.
Stir fry for about one minute.
Add the chicken.
Stir fry for one to two minutes more.
Add the cauliflower rice if you are using
Pour in the soy sauce, chipotle in adobo, and powdered ginger.
Give it a good stir.
Move the cauliflower mixture to the side to create empty space in the pan.
Beat the eggs in a small bowl and pour in the beaten eggs.
Using the bamboo spatula push the egg around and mix in with the cauliflower mixture until it is cooked.
Stir in the green onions.
Taste and add more soy sauce or chipotle if necessary.
Serve garnished with remaining green onions.
