To have the rice that I love I cam up with this healthy version by making cilantro lime cauliflower rice. This easy cauliflower rice recipe is made with simple ingredients and is a great way to enjoy the flavors I love while sticking to my low carb and keto diet needs. I know people hear the words cauliflower rice and think it is going to be boring and bland. I don’t do boring and bland and this cauli rice is far from boring. It is flavorful, easy to make and one of the most perfect side dish recipes that goes well with many main dishes.

Can I use Frozen Cauliflower Rice?
Yes! You can use a 20 ounce bag of frozen cauliflower rice in place of a head of cauliflower. I will say that while this recipe will work fine with store bought cauliflower rice I much prefer that we make our own cauliflower rice so everything is as fresh as it can be.
Tips for Making this recipe
Riced Cauliflower. I personally use bagged cauliflower rice when I am making this recipe because it is easier and quicker. If you want to use fresh cauliflower you totally can, just use your food processor to chop the uncooked cauliflower into tiny pieces.
Use fresh ingredients. For the best flavors, you want to use fresh cauliflower, fresh cilantro and fresh-squeezed lime juice.
Lime Juice. While fresh lime juice is best if you only have the bottled lime juice you can use that.
Want a little spice? Add a little chili powder or chipotle powder.
How to Store Cilantro Lime Cauliflower Rice
After making this easy cilantro lime cauliflower rice recipe you need to store it in the fridge or the freezer. It will keep in the fridge for up to 4 days, however I prefer using it with in 2 days of making it and having it in the fridge.
Can I freeze this recipe?
After cooking allow it to cool completely and store in an airtight container or in freezer bags. This recipe freezes well for up to 3 months.
Cilantro Lime Cauliflower Rice Ingredients
- 1 head cauliflower riced (2.5 cups to 3 cups) or 20 oz frozen cauliflower rice.
- 2 tablespoon butter
- 1/2 cup fresh cilantro, chopped
- 1 lime, zested
- 3 tablespoons lime juice, freshly squeezed
- 1/4 teaspoon salt
How to Make Cilantro Lime Cauliflower Rice
If using fresh cauliflower, make cauliflower rice.
Zest and juice the lime into separate bowls and set aside.
Chop the cilantro and set it aside.
In a large skillet over medium heat add the butter and cauliflower. Cook until the cauliflower is tender.
Stir in the chopped cilantro, lime zest, lime juice, and salt. Mix well and serve as desired.
