Instead of chips we load up some sliced bell peppers with nacho toppings and bake in the oven for a delicious low carb nacho recipe! These keto nachos are perfect for a party, lunch, dinner, or a healthy snack!
Bell Pepper Nachos
I love my pork rind nachos recipe, but let’s be fully honest pork rinds are not as healthy as veggies. So I wanted to come up with a healthier nacho recipe to enjoy. With my garden this year I planted lots of peppers, I am hoping they grow but for now, I have been grabbing fresh produce from the store and veggies stands and enjoying them until mine hopefully grow. I am hoping that I have an overwhelming amount of bell peppers so I can makes these bell pepper nachos often.
I made them the one night and at first, my kids gave me the eye roll about making nachos with bell peppers and then before I knew it the tray of nachos was gone. So I say this easy keto nacho recipe was a hit even with the kids who are not low carb eaters.

Can I make these ahead of time?
These keto nachos are best served warm right from the oven. If you want to get some of the work done ahead of time, you can slice the bell peppers, cook the ground beef and store them in air tight containers until you are ready to assemble the nachos. You can also prep the toppings that you want to use for these keto nachos ahead of time as well.
What toppings can you add?
I add ground beef, black olives, lettuce, avocado, sliced tomatoes, and sometimes jalapenos to my keto pepper nachos. You can also top them with Guacamole, homemade white queso or sour cream after they are done baking if you want to.
Variations to this recipe
Different colored peppers. All bell peppers are low in carbs, green are the lowest in carbs but if you want to have different color peppers you can use the red, yellow and orange peppers as well.
Change up the meat. Not a fan of ground beef, you can use ground turkey or ground chicken. Have some left over steak from making air fryer steak? You can use that too!
Change up the cheese. I use either shredded cheddar cheese or Mexican blend cheese, but you can also use Pepperjack cheese. I do suggest that you shred your own cheese since bagged shredded cheese has a coating on it to make it not stick together in the bag.
Change up the toppings. You can add any toppings that you want. I suggest leaving things like black olives, lettuce and avocado off until after you have baked the bell pepper nachos or they get soggy when baked in the oven.
Bell Pepper Nachos Ingredients
Bell peppers. Sliced into triangles to carry the tasty goodness of the nacho toppings, these are best when they are cut into triangle shapes.
Ground beef. I like to make slow cooker taco meat and then freeze it so I have it on hand whenever I need it. You can make extra meat when making this recipe and freeze it to easily make these nachos whenever you want them. If you want to change up the meat you can use ground chicken or ground turkey. You can also use Barbacoa or shredded chicken also.
Taco seasoning. It is best to use homemade taco seasoning so you know what is in it, the packaged taco seasoning has cornstarch at times. Use the Keto Taco Seasoning recipe for the best seasoning.
Jalapeno peppers. These are totally optional, but if you want some spice with your nachos add some sliced jalapenos peppers. You can use jarred or fresh jalapenos.
Shredded cheese. Cheddar cheese or Mexican blend cheese are my go tos but you can use your favorite cheese.
Toppings. You can use any toppings that you too, when making these I used, sliced cherry tomatoes, sliced avocado, shredded Lettuce, and black olives.
How to Make Bell Pepper Nachos
Preheat oven to 375°F
Wash and cut the peppers into triangle shapes.
Place on a baking sheet lined with parchment and bake for 10 minutes.
While the peppers are in the oven make the taco meat.
In a skillet over medium heat brown the ground beef and drain. Once the meat is cooked add in the taco seasoning and mix well.
Remove the peppers from the oven and scoop cooked taco meat on top of each one.
Add cheese on top of each pepper.
Place back in the oven under the broiler for 1-2 minutes.
Remove from the broiler and top with toppings of choice.

Bell Pepper Nachos
Ingredients
- 2 large Bell peppers
- 1/2 pound ground beef
- 1 tablespoons taco seasoning
- ¼ cup jalapeno peppers optional
- 1.5 cups shredded cheddar cheese or Mexican blend cheese
- 1/4 cup cherry tomatoes
- 1 avocado
- Lettuce
- Black olives
Instructions
- Preheat oven to 375°F
- Wash and cut the peppers into triangle shapes
- Place on a baking sheet lined with parchment and bake for 10 minutes.
- While the peppers are in the oven make the taco meat.
- In a skillet over medium heat brown the ground beef and drain. Once the meat is cooked add in the taco seasoning and mix well.
- Remove the peppers from the oven and scoop cooked taco meat on top of each one.
- Add cheese on top of each pepper.
- Place back in the oven under the broiler for 1-2 minutes.
- Remove from the broiler and top with toppings of choice.
