Pizza night is something we have done forever. Going low carb didn’t mean I was willing to give up pizza. I mean really, there is so much to love about a piece of pizza that has ooey-gooey cheese and a tasty sauce. As much as I love Cauliflower crust I know that it is not something that everyone loves. To be honest I also wanted something a bit closer to a traditional pizza crust.
Of course, that means that I was in the kitchen finding a solution and the creation is this fathead pizza crust dough recipe. Many of the fathead dough recipes I had tried had some type of flour in them. While almond flour and coconut flour are low carb and keto friendly they are on the pricier side so I wanted to come up with a recipe that was like fat head dough without having the cost of the expensive flour.
This low-carb pizza crust recipe is so easy to make and is perfect if you are eating a keto diet or a low carb diet. It tastes close to regular pizza dough so when you make your pizza and you are enjoying it you feel like you are eating the real pizza.

Fathead dough is a low carb and keto friendly dough that is made with cream cheese, parmesan cheese, eggs, and spices. The ingredients are mixed together and then poured onto a baking sheet and then baked in the oven to form a pizza crust. Fathead dough is popular among people following a low-carbohydrate or ketogenic diet because it is high in healthy fats and protein, and low in carbohydrates.
Because I wanted to keep this recipe on the budget friendly side, this fat head dough recipe contains no flour at all. However, once baked it forms the best keto pizza crust ever! Then just add your sauce and your toppings and you have the best pizza with a low-carb crust ever!

What pizza sauce is best for Keto Pizza?
If you are making these as a quick last minute idea for dinner then using Low Carb jarred pizza sauce is going to be the easiest thing. However, I like to keep homemade pizza sauce on hand for the times we are going to need it. If you are eating low carb or keto then you are going to want to make sure you use a low carb sauce to keep the carbs down.
I personally prefer to use a low carb marinara sauce when making this recipe. You can use your favorite sauce, or try out one of the low carb marinara sauces that we enjoy using. You can also use homemade marinara sauce if you want to. I like to make and freeze homemade marinara sauce so I have it on hand when I want to use it.

What toppings can I add to keep my pizza low carb?
You can add any toppings of choice to customize your homemade pizza after you have made the crust but if you are wanting to stick to a low carb diet then its best to stick with low carb toppings. When you are making this low carb pizza the great thing about it is that any of your favorite pizza toppings can be used too! There are LOTS of low carb pizza topping choices to pick from too! Tips & Variations of this recipe
- If you do not have basil and oregano you can substitute 2 teaspoons of Italian Seasoning.
- Use a pizza stone or a pizza pan instead of a baking sheet.
- Use parchment paper on a baking sheet. So the keto crust doesn’t stick when baking it is best to put a piece of parchment paper on top of the baking sheet if you are using one.
- Don’t over bake. You will be baking the pizza crust the first time to make it solid and cooked and then the second time after you put on the tomato sauce and the pizza toppings. When you see the mozzarella cheese is melted remove the pizza from the oven.

- 8 ounces of cream cheese at room temperature
- 2 eggs
- 1/3 cup Parmesan cheese freshly grated
- 1 teaspoon basil
- 1 teaspoon oregano
- 1 teaspoon garlic powder
- Pinch of Sea salt to taste
- Pinch black pepper to taste
How to make Keto Pizza dough
Remove the cream cheese from the fridge and bring it to room temperature.
Preheat oven to 375° F and line a large rimmed baking sheet with parchment paper. Set aside.
Combine cream cheese, eggs, Parmesan cheese, 1 teaspoon basil and oregano, and ½ teaspoon garlic powder in a medium-sized bowl. Season with salt and black pepper, to taste, and whisk until the mixture is completely blended and smooth.
Spread the cream cheese mixture onto the prepared baking sheet into the desired shape and thickness. (For thicker crusts, reduce oven temperature to 350° F and increase baking times for best results).
Place the crust in the pre-heated oven for 8-10 minutes, or until slightly puffed and golden brown. Check halfway through cooking time to ensure the crust bakes evenly and does not become too brown.

To use this keto pizza crust recipe to finish your pizza you will remove it from the oven, and top it with sauce, mozzarella cheese, and your favorite pizza toppings.
