Lettuce wraps have recently become one of my favorite things to have for lunch, snack or dinner. They are so easy to make and I can prep the filling ahead of time and enjoy it for multiple meals.
One of the more recent ones has been, these low carb Buffalo Chicken wraps. I have always been a fan of Crockpot Buffalo Chicken Dip, and I will admit that I have eaten it with a spoon on many occasions. But I have now added it to a leaf of bib lettuce, added some celery and a drizzle of ranch dressing and OH YUM!! They are delish!
These first came about when I had a ton of left over buffalo chicken dip, and since then I have tweaked it a bit to get it just right.
While I love how easy it is to just toss everything in the crockpot and make buffalo chicken dip I don’t always want to wait for the crockpot to cook it. So i came up with this oven baked buffalo chicken that is perfect for making buffalo chicken lettuce wraps!
Now, if you do have left over buffalo chicken dip you can totally use that to make these buffalo chicken lettuce wraps. If you do not have any buffalo chicken dip on hand, you can make this oven baked buffalo chicken dip and use it to make your buffalo chicken lettuce wraps.

Fresh Chicken or Canned Chicken?
I like to cook fresh chicken when I am making these wraps if I have the time. Sometimes I have the time, other times I do not. One way to make sure I have chicken on hand is to cook a bunch of chicken ahead of time.
When I know I am going to be running short on time during the week, I will toss a few chicken breasts into the crockpot with a little bit of salt and pepper and let them cook for 3 hours. Then I shred them or just store them in an airtight container to use during the week as needed.
You can make also make this buffalo chicken lettuce wraps recipe with canned chicken or rotisserie chicken if you are running short on time. I prefer using a rotisserie chicken over canned chicken, but either one will work.

What Lettuce is best for Chicken Wraps?
When I am making any type of chicken wrap or other dish I use either bib lettuce or romaine lettuce. I find these two types of lettuce hold up the best when filling them with tasty goodness.
You can use iceburg lettuce if that is all you have on hand, however I find that it rips easier then I like my lettuce to rip and then I end up with a mess at times when I am eating them.
Buffalo Chicken Lettuce Wrap Recipe Ingredients
- 1/2 cup ranch or blue cheese dressing
- 2 cups shredded Chicken
- 1/2 cup Buffalo style hot sauce
- 8 ounces Cream cheese (Softened)
- 1/2 cup Monterey Jack cheese
- 1 head bib lettuce
- 2 celery sticks
- 1/2 cup liquid ranch dressing
How to Make Buffalo Chicken Lettuce Wraps
Preheat the oven to 400 degrees F.
In a medium sized bowl add the cream cheese, ranch dressing, hot sauce, Monterey jack cheese, and shredded chicken. Mix everything full till it is all well combined.
Spray a baking dish with nonstick spray.
Pour the buffalo chicken mixture into the baking dish. Bake for 15-20 minutes, until the cheese is melted. Stir the buffalo chicken mixture well once the cheese is completely melted.
While the buffalo chicken is cooking wash and prep the lettuce. Break the leaves off the lettuce head making sure to leave them whole.
Wash the celery and chop the celery into thin size pieces.
Place one lettuce leaf onto a plate scoop 1/4 cup of the dip onto the lettuce.
Top the dip with celery and then drizzle the ranch over the dip.
