How to Store Cauliflower Rice Risotto
Allow the leftovers to cool and then store in an air tight container in the fridge. It will keep for 3-4 days.
If you want to freeze it you can, just allow it to cool completely and store in a zip close bag. It will keep for about 3 months. To serve let it thaw in the fridge over night and reheat in the microwave or a skillet.

Variations of this recipe
Take a short cut. If you want a total short cut for this recipe use two bags of Green Giant Cauliflower Risotto Medley Riced Veggies. For taking the photos I used these bags, but I have made it with fresh made riced cauliflower many times.
Use Frozen Cauliflower Rice. If you are short on time you can totally use frozen riced cauliflower but I find that it tastes much better when I make my own riced cauliflower. Making your own is super easy and only takes a few minutes.
Add more veggies. The Risotto Medley Riced Veggies has asparagus in it, it adds another layer of flavor and texture, so chop up a few pieces of asparagus and add it in.
Cauliflower Rice Risotto Ingredients
- butter
- onion, diced
- garlic, minced
- fresh or frozen riced cauliflower
- mushrooms
- grated parmesan cheese
- heavy cream
- salt
- pepper
- parsley
How to Make Cauliflower Risotto
Make your riced cauliflower if you are using fresh made riced cauliflower. Wash and chop the mushrooms.
In a sauté pan over medium heat cook the butter and onions until the onions have softened.
Add in the garlic, mushrooms and cauliflower, cook for 5-10 minutes until the cauliflower has softened. The time it will take depends on the the stove and the pan you are using.
Once the juices from the butter and cauliflower have cooked away, stir in the cheese, heavy cream, salt, and pepper. Cook until the sauce has thickened about 5 minutes.
Top with parsley and enjoy.

- 1 head cauliflower riced or 2 bags frozen cauliflower
- 1 cup parmesan cheese
- 1/2 cup heavy cream
- salt to taste

- 1 tablespoon parsley optional

- Make your riced cauliflower.
- In a saute pan over medium heat cook the butter and onions until the onions have softened.
