How long does Broccoli Casserole last?
After cooking, broccoli casserole will last in the fridge, covered for 3-4 days. To reheat just put in a microwave safe dish and reheat.
Can I make this ahead of time?
If you are wanting to serve this keto broccoli casserole at a large gathering or a holiday dinner you can make this ahead of time. Do all of the prep work up until the baking step. Then cover the dish with plastic wrap and store it in the fridge for up to a day. When you are ready to serve remove the plastic wrap and bake in the oven.
How to store Leftovers
Leftovers need to be refrigerated and stored in an airtight container. They will keep in the fridge for 2-3 days.
Can I freeze Broccoli cheese casserole?
While this broccoli cheese casserole is easy to make, you can make it ahead of time and freeze it. Do all of the prep work up until the baking step.
Pour the casserole ingredients into a baking dish, or a foil pan and cover with foil. Store in the freezer for up to 3 months.
When you are ready to serve it, remove it from the oven and let thaw overnight, and then bake according to the baking directions.

Variations of this recipe
Bacon. If you want to add cooked bacon to the top of this broccoli casserole it gives a great extra flavor to the casserole. Just cook the bacon and then crumble it and sprinkle it on top before baking.
Cheese. I use cheddar cheese when I am making this keto casserole but you can also use Monterey Jack, parmesan cheese, or pepper jack cheese.
Ranch. You can use homemade ranch or store-bought ranch. If you are making ranch dressing homemade it will have fewer carbs than the store-bought ranch dressings.
Tips for Making this Recipe
Use a microwave veggie steamer instead of heating the broccoli in the microwave with water.
Broccoli. You can use frozen broccoli if that is what you have on hand, just cook it before using it in the recipe. If you want to blanch the broccoli instead of heating it in the microwave you can.
How to Steam Broccoli in the Microwave
Place the broccoli in a medium microwave-safe bowl. Add the water to the bowl and microwave for 3 minutes.
How to Blanch Broccoli
Fill a large pot with water and bring the water to a boil and then add the fresh broccoli. Cook the broccoli in the boiling water for 3-5 minutes until it turns bright green. Then using a strainer strain the water from the broccoli. You will know the broccoli is cooked when it has turned bright green and is tender enough to pierce with a fork but still firm.
Broccoli Casserole Ingredients
- 2.5 cups fresh broccoli
- 1/2 cup water
- 8 ounces cream cheese, softened
- 1 1/4 cup cheddar cheese, shredded and divided
- 1/4 cup ranch dressing
- salt to taste
- pepper, to taste
How to Make Broccoli Casserole
Preheat the oven to 350°F.
Wash and chop the broccoli into small pieces if you are using fresh. If you are using frozen then it normally comes frozen and already chopped into pieces.
Place the broccoli in a medium microwave-safe bowl. Add the water to the bowl and microwave for 3 minutes. Allow the broccoli to cool and drain the excess water from the bowl.
In a medium bowl mix together the cream cheese, 1 cup of shredded cheese, ranch dressing, salt, and pepper.
Stir in the broccoli.
Pour the broccoli into an 8×8 baking pan. Sprinkle the cheese over the top of the broccoli.
Bake for 10-15 minutes until the cheese is all melted.
Drizzle additional ranch dressing on top if desired.
