I don’t know if I have expressed how amazing cooking in the InstantPot is. It is easy to can cook things quickly and have a tasty dinner on the table in no time. I have fallen in love with my InstantPot, even though originally it sat in my cabinet for a few months after my husband bought it for me. To be honest I was slightly intimidated by learning how to work a new appliance but once I got the hang of I have loved it more then I ever thought I would.
This creamy Chicken and Cauliflower Rice Soup is made in the InstantPot, however I have also included tips for you to make it in a pot on the stove if you do not have an InstantPot.

Perfect for Lunch or Dinner
One of my ways to keep time down during the week is to make a batch of soup and then reheat it during the week for lunch. I have found that I stick to eating the way I should be when I have it easily accessible. With 4 kids, homeschooling and working from home time is a very valuable thing for me.
If I plan on making soup for dinner, then I normally double the recipe and have it for lunches the rest of the week. If you are leaving the house to go to work you can easily put it into a thermos to keep warm or put it in a container and reheat it in the microwave at work for an easy low carb work lunch.

Whenever we have soup as a meal my go to sides are a fresh made salad and a bread for dipping. For this easy low carb chicken soup I make our fresh salad, use a low carb dressing and then make either homemade keto cheddar biscuits or keto cheddar bay biscuits.
Chicken and Cauliflower rice soup Ingredients
- chicken breast
- chicken stock
- cream cheese
- shredded cheddar cheese
- ranch mix packet or homemade ranch seasoning
- Green Giant Cauliflower Risotto Medley Riced Veggies or a bag of frozen riced cauliflower that you prefer.
How to Make Chicken and Cauliflower rice soup
InstantPot Directions
In the pot of your presser cooker or instantpot place the chicken breast and chicken stock. Set the pressure cooker for 15 minutes.
Use the quick release to remove the steam once 15 minutes have passed.
Using two forks shred the chicken. Turn the cooker to saute low.
Add in the Green Giant Cauliflower Risotto Medley Riced Veggies.
Add in the cream cheese, cheese, and ranch and stir until all the cheese has melted.
Stove top Directions
If you do not have an InstantPot cook your chicken by your preferred method (baking, boiling or even a cooked rotisserie chicken from the store).
In a large pot over medium heat add the chicken stock and cooked chicken and bring to a boil. .
Once at a boil, turn the heat to low and add in the Green Giant Cauliflower Risotto Medley Riced Veggies, cream cheese, cheese, and ranch and stir until all the cheese has melted.

- 2 cups cheddar cheese
- 1 packet ranch mix or 2 tablespoons of homemade ranch seasoning
- 12 oz Green Giant Cauliflower Risotto Medley Riced Veggies or a bag of frozen riced cauliflower that you prefer.

Just made this delicious soup! A little goes a long way. Hearty with a wonderful mix of flavors. I added some mirepoix to the riced cauliflower and it added a nice flavor. Great recipe!
