Chocolate Keto Ice Cream
I can’t help myself right now but to think of warm and summer and fun. Being home and not doing our normal things and not planning our normal things has made it so we have been having a lot of ice cream sundaes.
Downside to ice cream sundaes is that I can not enjoy them with the kids with traditional ice cream. I have also yet to find a low carb ice cream in the store that I actually enjoy.
We have made the Strawberry Keto Ice Cream multiple times. I love it and the kids love it, however I am a HUGE chocolate fan. I love all things chocolate, from chocolate covered almonds, to chocolate coconut balls and chocolate covered macadamia nuts (and all of those I have linked to are keto friendly and low carb so check them out and enjoy them too!).
Chocolate is also my go to for ice cream and so it was time to come up with a low carb chocolate ice cream that I can enjoy while the rest of the family has their ice cream.

Tips for making this recipe
Use a good quality cocoa. You might be tempted to go with a cheaper cocoa powder but to have a rich chocolate flavor you want a good cocoa powder. Also make sure you are using unsweetened cocoa powder.
Granulated Sweetener. The great thing about this easy ice cream recipe is that you can use any of the granulated sweeteners with it as long as it is a sugar alternative. Monk fruit, erythritol, swerve will all work when making this keto chocolate ice cream.
Allow the ice cream to thaw a little before serving. After the ice cream has been in the freezer for an hour you will have the consistency of soft serve. As the ice cream freezes longer in the freezer it will get harder so you will want to let it thaw about 10 minutes or so on the kitchen counter after it has been frozen for a while to be able to scoop it from the mason jar.
Store in a mason jar or in a metal baking pan. Sometimes I find it easier to store the ice cream in a bread pan after it has reached soft serve consistency. It makes it easy to scoop out and serve after it has frozen more. All I do is scoop it into the bread pan and cover with foil once it has reached soft serve consistency and put it back in the freezer.
