Crockpot Corned Beef and Cabbage
St. Patrick’s Day is coming soon and corned beef and cabbage is a must in our house. This low Carb corned beef and cabbage is the perfect crockpot meal even when it is not St. Patrick’s Day! We love enjoying crockpot corned beef and cabbage even when it is not St. Patrick’s Day!
What is corned beef?
Corned Beef is brisket, which has been cured and brined and it comes with a seasoning packet. Makes for a super simple slow crock pot meal. Once cooked this meat is super tender and flavorful! Corned beef and cabbage is an Irish inspired dish!
What goes with Corned Beef and cabbage?
When I make this easy crockpot recipe I sometimes add potatoes for those in my house who are not low carb and we always do carrots into the crockpot as well.
You can make also make Irish soda bread for those who are not low carb, but this year instead of making Irish Soda bread I will be making some Keto Cheddar biscuits!

How long does it take to cook Corned Beef in a Crockpot?
It takes roughly 8.5 hours to cook a corned beef in a crockpot. It all depends on the crockpot that you have.
I do suggest checking it at the 7 hour mark and planning the 8.5 hour mark to be when we are going to eat. If you are adding carrots to it you will do that at the 3 hour mark. At the 7 hour mark you will add the cabbage into the crockpot.
I know this sounds like a super long time, but once you put the meat into the crockpot you don’t have to do anymore work!
Crockpot Corned Beef and Cabbage Ingredients
- 1 medium sized Head of cabbage
- 1 4 pound Corned beef brisket
- 2 cups baby Carrots (or 3 sliced large carrots)
How to Make Crockpot Corned beef and Cabbage
Prep your crockpot by spraying non stick cooking spray or lining it with a disposable crockpot liner and setting the temperature setting to high.
Place your corned beef in the crockpot, pour the seasoning packet that comes with it on top of the meat then pour enough water to cover the whole corned beef.
Put the lid on the crockpot to start cooking on high for 8.5 hours.
After 3 hours of cooking, if you are adding carrots you will want to add them to the crockpot so they can cook with the corned beef.
At the 7 hour mark rinse your cabbage and cut it into wedges. Add the cabbage wedges into the crockpot.
Cook the corned beef and veggies for another hour. At the 8 hour mark check the corned beef and the cabbage to see if it is cooked all the way. You also want to make sure the vegetables are tender.
If the beef is not fully cooked and the veggies are still a bit hard, continue cooking for another 30 minutes.
Once it is done cooking remove the beef from the crockpot and allow to cool and set for 5 minutes before cutting.
Once the corned beef is completely cooled and set, slice corned beef into slices.
Remove the veggies in place them in a serving bowl.
