I love cold salads during the summer and this low carb cucumber salad is the perfect summer side dish. Cucumbers are naturally low carb and fresh dill has an amazing flvor that makes this Dill Cucumber Salad recipe the perfect easy side dish. This cucumber salad takes about 5 minutes to prep, then 10 minutes to set in the fridge for the flavors to combine and it is done.

Tips for making cucumber Salad
Even thin sliced cucumbers. I find it best to use a mandolin to slice cucumbers. You want them thinly sliced and uniformly sliced.
Let sit for at least 10 minutes in the fridge. You can let it sit longer but it needs at least 10 minutes for the flavors to be absorbed by the cucumbers.
Thin sliced red onion. You want to slice the red onions thin so you don’t have an over powering onion flavor.

- salt
- red onion, sliced
- red wine vinegar
- fresh dill
- olive oil

How to Make Dill Cucumber Salad
Wash and dry the cucumbers. Slice thinly using a mandolin.
In a medium mixing bowl, combine the cucumber and salt, allow them to sit for 10 minutes for the salt to soften the cucumber and pull out some of the water.
In a small mixing bowl, combine the red onion with the vinegar, allow it to sit for 10 minutes.
Mix the onion mixture into the cucumbers. Add in the dill, olive oil, and pepper, stir well.
Place the salad into the fridge for 10 minutes to chill.
