How do I get my chicken wings crispy?
To get your chicken wings crispy, it is important to make sure the wings are dry. My preferred method is to sweat the chicken with salt in the refrigerator uncovered for at least an hour making sure to not over-salt the chicken. I like to let them sit for about 4-6 hours if I have time. For additional crispiness, dip the wings in cornstarch and spritz with oil. This will add another layer of crunch however you will need to use more oil to achieve it.
