Before making this turkey gravy you will need to make a turkey, I suggest making a salt brined turkey or roasted turkey breast. If you are using another type of meat and making gravy then you will want to cook that meat first before making gravy.
How to thicken gravy with out adding carbs
When making low carb gravy we opt for using xanthan gum instead of flour. We have found that both coconut flour and almond flour are difficult to get that perfect smooth gravy texture that we love and it ends up with clumps of flour. Not the way I like to enjoy my gravy. I found that a teaspoon of xanthan gum was all I needed to get the thickness that I wanted, but if you want to make yours thicker then you can add a bit more.
Variations of this recipe
The great thing about this keto gravy is that the base recipe is very versatile. You can make this gravy with just about any meat flavors to pair with other recipes as well.
Keto Beef Gravy. Use beef broth and meat drippings
Keto Chicken Gravy. Use chicken broth and chicken drippings.
Tips for Making this Recipe
Not enough meat drippings? That is ok, you will want 1/2 a cup of meat drippings but if you do not have that fill a measuring cup with the drippings you do have and then add olive oil to it until you have 1/2 a cup.
No Broth? If you don’t have broth you can use bullion cubes to make broth.
Avoid clumping. Put the ingredients in the pot and then turn on the heat to avoid having the xanthan gum clump.
Making it thicker. If you want to make it thicker after you have heated everything up, add xanthan gum in a bowl with 2 tablespoons of broth and mix well. Then add to the heated pot and stir until it is the thickness you want.

- Turkey broth
- xanthan gum
- Garlic powder
- salt
- pepper
- Turkey drippings
How to Make Keto Turkey Gravy
Whisk the turkey broth, xanthan gum, garlic powder, salt, and pepper into a small pot, kept string the mixture until most of the lumps are dissolved.
Heat over medium-high heat and bring it up to a boil for one straight minute.
Stir in the drippings from the turkey. If you don’t have any drippings stir in 1 tablespoon of butter to the pot.
Serve the gravy hot.
