Grilled Cheese Keto Chaffles. Yes please! I have enjoyed all sorts of different chaffle recipes but this grilled cheese chaffle recipe is one that I was most excited to have come up with.
Grilled Cheese Chaffle Recipe
One thing that I have been missing since going low carb is bread. I love an ooey gooey grilled cheese sandwich that is dripping with melted cheese. Once chaffles took storm all over the internet it was my lucky win. Before going low carb I loved having grilled cheese roll ups and Red Pepper and Mushroom Grilled cheese sandwiches. Well we all know that bread is a no no when you are sticking to low carb, so finding this alternative has made a BIG difference for me.
The great thing about making this grilled cheese chaffle recipe is that once you have made the chaffles you can use any variety of cheese that you want to. Depending on my mood I will use american cheese, or provolone cheese. If I do not have any sliced cheese on hand then I will use shredded cheese instead.
What is a Chaffle?

Do Chaffles taste like cheese and Egg?
So this might shock you but the ones I have made and created do not taste like there is egg in them at all. There are some chaffle recipes that are made to be a hand held breakfast meal, like the bacon, egg and cheese chaffles. But the majority of them do not tasty eggy or cheesy at all. Which is fantastic for making a sandwich with!
How Do You Make Chaffles Crispy?
When you first remove the chaffle from the waffle maker it is going to be soft and kind of flimsy. The trick is to let it sit for a few minutes. While it sits it firms up a bit and is perfect for using as keto bread or keto toast.
Do I need to use Almond or Coconut Flour when making a Chaffle?
I love chaffles with or with out the almond flour, but I think they taste better and hold up better when I include almond flour when I am making them.
What do I cook a chaffle in?
I have been cooking my chaffles in the Dash mini waffle maker. If you do not have a mini waffle iron you can grab one on amazon. They are awesome and totally budget friendly. The basic chaffle recipe will make 2 chaffles in a mini waffle maker.
You can also use a normal sized waffle maker you make keto chaffle recipes. When using a normal sized waffle maker the basic keto chaffle recipe it will make 1 chaffle.
How do you cook a Chaffle?
You can make a chaffle in just about any waffle maker. I personally prefer to use the mini dash waffle maker because it makes them smaller. This recipe is made to make 2 small chaffles in the dash mini waffle maker, but if you are using a normal sized waffle maker then this recipe will make 1 chaffle.
Variations of this Recipe
Add meat. You can add meat just like you would when making any cheese sandwich, turkey, ham and bacon are great options. You can add the meat before you grill up the sandwich on the stove.
Add veggies. After you have cooked the low carb grilled cheese add veggies like lettuce and tomato. You can also add sauteed veggies before cooking like bell peppers and mushrooms.
Grilled Cheese Chaffle Ingredients
- 1 egg
- 1/4 teaspoon garlic powder
- 1/2 cup shredded cheddar
- 2 Slices of your favorite cheese or 1/4 cup of shredded cheese
- 1 tablespoon butter
How to Make Grilled Cheese Chaffle
Heat up your dash mini waffle maker.
In a small bowl mix the egg, garlic powder and shredded cheddar cheese.
Once the dash waffle maker is heated up add in half the chaffle mixture. Cook for 4 minutes and remove.
Add the remainder of the chaffle mixture to the dash mini waffle maker and cook for 4 minutes.
Once both chaffles are done heat a pan on the stove over medium heat.
Add 1 tablespoon butter and melt it. Once the butter is melted in the pan and place 1 chaffle down in the pan. Top that chaffle with the cheese of your choice and add the second chaffle on top of it.
Heat the chaffle for 1 minute on the first side and flip over and cook for another 1-2 minutes on the other side to finish melting the cheese.
Once the cheese is melted remove from the pan and enjoy!

Ingredients
- 1 egg

This grilled cheese chaffle really hit the spot and satisfied me for several hours after! I used sliced Gouda cheese for the center and 10 grams of fresh spinach… so good!

First time I used my Dash mini waffle maker. My husband thought too much butter on outside. Other than that we both liked it. I’ll have to try the spinach suggestion from Donna Burger.

I made my open faced with a tiny bit of goat cheese and placed raw baby spinach on them. I absolutely loved it. I did not regrill in the butter.
