When most people think of egg salad, they automatically think of egg salad on toast. When you are eating low carb, you don’t want to eat the bread. If you skip the bread and eat egg salad on its own or eat it with a lettuce wrap, egg salad is considered healthy.

Runny egg salad is usually the result of using too much mayonnaise. When making egg salad, be sure to use a light hand with the mayonnaise. You can always add more, but you can’t take it out once it’s in.

Change up the mustard. I like using yellow mustard but you can also use dijon mustard or brown mustard.
Add pickles. Love pickles? Add some chopped pickles for a tasty variation of egg salad, but be sure you use ones with no sugar added. I like using dill pickles.

Sugar and fat make things taste good. Because they added sugar and high fructose corn syrup, it is not keto or low carb friendly.

How to Hardboil Eggs for Egg Salad
There are a few different ways that you can make the hardboiled eggs for making this keto egg salad. You can make Instant Pot hard boiled eggs, Air fryer hard boiled eggs, oven baked hard boiled eggs, or traditional hard boiled eggs. Whichever way you choose to make the hardboiled eggs is up to you.

- Hardboiled eggs. Cook the eggs with your preferred method of cooking.
- Mayonnaise. Use a sugar-free mayo to keep it low carb and keto friendly.
- Yellow Mustard. You can also use brown mustard or Dijon mustard.
- Salt.
- Black Pepper.
How to Make keto Egg Salad
Cook the hard boil eggs by your preferred method.
While they are cooking make a bowl of ice water, by adding cold water and ice to the bowl.
Once the eggs are cooked place eggs into the ice bath to cool them.
Shell the hardboiled eggs. Once they are shelled, cut each egg in half.
In one small bowl put all of the yolks. In a larger bowl put all of the egg whites.
Next cut all of the egg whites into small pieces and put the chopped egg whites back into the large bowl.
With a fork smash the yokes until they are all fully crumbled into tiny crumb pieces.
Add the mayonnaise and the mustard to the bowl with the mashed egg yokes. Mix everything well so it is nice and creamy.
Add the yolk mixture to the diced egg whites and mix well.
Add salt and pepper to taste.
Serve right away or store in the fridge.
