To keep it low-carb we have ditched the bread and used pork rinds instead. If you want to use bread you can but make sure it is a keto bread to keep the carbs low.

When eating homemade french onion soup I like to use a fancy soup bowl or Ramekin to put my soup in. You can use a regular soup bowl. But again, we like to be fancy in our house when we have this soup, so we stick to using our ramekins.

You can make this soup up to 3 days ahead of time. However do not put the bread and the cheese on top until you are ready to serve it.
Can I freeze this soup recipe?
You can also freeze french onion soup. Just let the soup cool completely and then freeze in an airtight container or a freezer zipper bag with out the bread and the cheese. Soup will keep frozen for up to 6 months.
Tips for Making this recipe
Thinly sliced onions. You want to have thin slices of onions when you are making this soup.
Do not stir the onions right away. When you are cooking the onions you do not want to stir them for the first 4 minutes.
Keep and eye on the soup when broiling. When you are broiling the ramekins with soup and topped with cheese the cheese will get melty and bubbly quickly so keep an eye on it so it does not burn.

- onions. You can use white or yellow onions, I prefer to use white onions.

- bay leafs
- Italian seasoning
- Gruyere Cheese Grated or provolone cheese
- salt
- pepper
- pork rinds
How to Make Keto French Onion Soup
Thinly slice all of the onions. Heat your soup pot on high on the stove. Once it is hot add the oil.
Once the oil starts to smoke add your onions. Cook the onions until they are wilted down and caramelized, about 20 minutes. Do not stir the onions for the first 4 minutes.
Next add the beef broth, bay leaf, Italian seasoning, salt, and pepper to the pot.
Cook the soup on medium heat for 30 minutes.
Ladle the soup into your bowl or ramekin.
Place a few pork rinds on top, and then sprinkle generously with grated cheese.
Broil until cheese is melted and bubbly.
