My friend spent a few years in New Orleans and shared with me a Jambalaya recipe that was amazing. However, while I am low carb the recipe didn’t fit with how I eat. So while I made it on a cheat day it wasn’t something I could make all the time. I wanted something that I could make all the time and so I came up with this easy to make low carb Jambalaya. Ingredients For Your Keto Jambalaya
- 1 tablespoon oil
- 1 medium onion, chopped
- 1 green bell pepper, seeded and chopped
- 1 stalk celery, chopped
- 1/2 pound andouille sausage, diced
- 2 pounds cauliflower rice – can use fresh made or frozen
- 1 – 28-ounce can diced tomatoes
- 1 tablespoon Italian seasoning
- 2 teaspoons Cajun seasoning, like slap your mama
- 1 cup chicken broth
- 2 bay leaves
- 1 pound shrimp, peeled and deveined
How To Make Keto Jambalaya
In a large pot combine the oil, onions, peppers, and celery. Then, saute them over medium heat until the onions are softened.
Next, add the sausage, italian seasoning, cajun seasoning into the pan and cook until the sausage is cooked through.
Add in the cauliflower, tomatoes, chicken broth, and bay leaves, allow the mixture to simmer for 10 minutes.
In a saucepan with the second half of the oil add in the shrimp over medium-high heat. When halfway through flip the shrimp, cook until the shrimp are pink all over. Add the shrimp to the cauliflower mixture.
