I have added these easy sugar free lemon bars to our dessert list to make them anytime we need a springy summery dessert.

They were also great for taking me away from the snowy backyard that we currently have going on so I could pretend it was summer for just a few minutes while enjoying them.

Tips for Making Low Carb Lemon Bars
When you are zesting the lemon be sure to only zest the yellow part of the lemon, you do not want to get any of the white part of the lemon into the zest.
Use fresh lemon juice. You will get much better flavor using fresh lemon juice squeezed right from a lemon instead of using bottled lemon juice.
Allow the bars to cool at room temperature then place them in the fridge to allow the bars to cool completely before you cut them, about 1 to 2 hours.

For this keto dessert recipe you will want to use a granulated sugar alternative. My go to sweeteners are swerve and monkfruit, you can use either one in this sugar free dessert, but with this one I much prefer using Monkfruit.

Making lemon zest is easy, all you need is a fresh lemon and a citrus grater. Gently rub the lemon with the peel on the grater to remove only the yellow part of the peel.

Crust Ingredients
- 2 cups almond flour
- 1 cup butter, melted
- 1/2 cup Monk fruit
- 1 teaspoon vanilla
Filling ingredients
- 1 cup Monk fruit one
- 1/3 cup almond flour
- 4 eggs
- 4 lemons, zested and juiced
- 1 tablespoon powdered Monk fruit
How to Make Keto Lemon Bars
Preheat oven to 350°F. Spray a 9 x 13“ pan with nonstick spray and lay a piece of parchment paper in the pan with the edges sticking out so you can easily remove the lemon bars from the pan.
How to make Lemon Bar Crust
In a large bowl add all of your ingredients for your crust and stir together.
Press the crust into your 9 x 13 pan. Be sure to make the crust even all the way around when you are pressing it into the pan.
Bake for 20 to 25 minutes until the crust is golden brown.
How to Make Lemon Bar Filling
When there is 10 minutes left on the crust baking time get started on making the lemon filling mixture.
In a medium bowl mix all of the ingredients for the filling together until well combined.
Pour the lemon filling mixture over the crust.
Bake for 15 to 20 minutes until filling has set.
Sprinkled with the powder Monk fruit over the top of the bars.
Then slice them into individual servings when ready to serve.
