However the traditional pancake recipe that I have made for years, while amazing and the best pancakes ever is not suitable for eating low carb. I am super picky about my pancakes and they have to be amazing. These keto pancakes made with coconut flour are amazing! It is seriously the best keto pancakes recipe ever!

How to Freeze Keto Pancakes
Cook pancakes and allow them to cool completely. Once they are cooled, stack them into piles – we do 2 or 3 low carb pancakes per pile.
Wrap each pile with plastic wrap and then put all wrapped piles of pancakes into a gallon size freezer bag and place in the freezer.
How do you serve sugar free pancakes?
My favorite way to enjoy these delicious low carb pancakes is with some butter and a drizzle of sugar-free maple syrup.
Keto pancakes can also be served with some homemade whipped cream and topped with fruit like strawberries, blackberries or blueberries.
How to Freeze Keto Pancakes
I like to make large batches of pancakes at a time to make breakfasts during the busy week even easier.
Freezing pancakes is so easy. Just cook your sugar free pancakes and allow them to cool. Once they are cooled stack into piles of serving size you normally make. We do 3 low carb pancakes per pile. Wrap each pile with plastic wrap and then put all wrapped piles of pancakes into a gallon size freezer bag and place in the freezer.
To reheat the low carb pancakes, remove a frozen keto pancake stack from the freezer and heat in the microwave in the plastic wrap for 30-45 seconds depending on your microwave.

- liquid stevia, or any other liquid sweetener of your choice

How to Make Low Carb Pancakes
Preheat a large skillet over medium heat or griddle to around 350ºF.
Mix the dry low carb pancake ingredients in one bowl.
Mix the wet low carb pancakes in another bowl.
Pour the liquids into the dry ingredients and stir until combined.
Lightly oil the pan.
Pour the batter into a measuring cup.
Pour pancakes batter on to the pan and cook until the bubbles pop. Flip the pancakes and cook until golden brown.

Ingredients
- 1/4 cup coconut flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 cup butter melted
- 1/4 cup heavy cream
- 1/8 teaspoon liquid stevia or any other liquid sweetener of your choice
- 3 eggs
- 1/2 teaspoon vanilla extract
Instructions
