What cut of meat is used for Pulled Pork?
I like to stick with a pork shoulder however you may see it labeled as pork butt or Boston butt in the store. You can use bone in or boneless pork shoulder for this recipe. If you are using a bone in pork shoulder you will want to remove the bone before shredding it.

By itself. This keto pulled pork is so tender and tasty that you can eat it as is with nothing added to it.
As a lettuce wrap. Being low carb you will want to adjust that and use lettuce as your wrap. I personally prefer bib lettuce or iceburg lettuce when I am making my pulled pork into a pulled pork wrap. - 2 lbs. pork shoulder
- 2 teaspoon onion powder
- 1 teaspoon garlic powder
- 2 teaspoon dried rosemary
- 2 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- 1 teaspoon ground fennel seeds
- 2 teaspoon cocoa powder
- sea salt (to taste, roughly 1 teaspoon)
- black pepper (to taste, roughly 1 teaspoon)
- 1/3 cup sugar- free chicken broth (you can also use homemade chicken broth)
How to Make Crockpot Low Carb Pulled Pork
Combine all spices and the cocoa in a small bowl and season with salt and black pepper, to taste.
Rub the spice mix all over the pork shoulder and transfer to a 5 or 6-quart slow cooker crock.
Add the chicken broth to the crock and cook on high for 4 hours or on low for 6.
Once the cooking time is complete, use two forks to pull the pork apart while it is still in the slow cooker crock.
Allow the pulled pork to remain in the juices with the slow cooker set to “warm” for 20-30 minutes to absorb more flavor.
For even tastier results, allow pork to sit in its yummy juices for about 10 minutes in the crockpot once you’ve pulled it apart. This will allow it to absorb even more of that great flavor!
