My whole family loves avocados, every time the kids see avocados in the grocery bags when I get home from grocery shopping they are all asking how long until we eat them.
For the longest time, we enjoyed avocados as a dinner or lunch food, and then we found avocados stuffed with eggs topped with cheese and bacon, and oh yum!
A ridiculously easy to make low carb breakfast, that everyone devoured! Perfect, because I need easy breakfasts for the kids in the morning that can be made while we are all getting fully functional for the day. It takes this momma bit to wake up after the first cup of coffee in the morning. 😉

An avocado is ripe if it is soft feeling with a firm gentle push. It will feel soft but not mushy when you press lightly on it. Avocados do get darker as they ripen, but the colors can vary so it is best to test for ripeness with touch.
How to pick the best Avocado at the Store
When you are shopping at the store for avocados there are a few things to be aware of when you are shopping for avocados. A ripe avocado can last on the counter for 2-3 days or in the fridge for 3-5 days.
Don’t buy it ff the avocado feels smushy, that means it is bad and you will not be able to use it.
If an avocado has some give and feels soft then you will have 2-3 days to use it before it goes bad.
If an avocado feels firm with a small amount of give then you will want to leave it at room temperature for 1-2 days for it to ripen.
When an avocado is fully firm and no give at all it will need 4-6 days to ripen on the counter.
Tips for making this recipe
Use large avocados and make sure the avocados are ripe and fresh.
Use medium-sized eggs.
Cracking each egg into a small bowl before carefully pouring it into the avocado will also help prevent spills.
To keep your egg-filled avocados from tipping over while baking, position them over the holes of a muffin tin, rather than on a flat baking sheet, before placing them in the oven.
Variations of this recipe
Change up the meat. You can use cooked sausage or ham instead of bacon.
Change up the cheese. I used cheddar jack but you can use any of your favorites.
How to store leftovers
These will keep in the fridge for 1-2 days, although I suggest eating them as soon as you make them for best taste and texture. Freezing is not recommended.
Loaded Avocado Ingredients
- 2 large ripe avocados
- 4 medium eggs
- Sea salt and black pepper, to taste
- ½ cup Cheddar Jack Cheese, shredded
- 3 strips sugar-free bacon, cooked crispy and crumbled. The best way to cook the bacon is to make air fryer bacon.
- Optional garnish: chives or green onions (green parts only), sliced thin
How to Make Loaded Avocados
Preheat oven to 350° F and line a rimmed baking sheet with parchment paper.
Cut avocados in half lengthwise and remove the pits. Use a spoon to carefully remove some of the avocado flesh around the pit to create more space for the egg. Reserve removed flesh for another use (or smash, season with salt and pepper, and top each baked avocado half with a spoonful before serving).
Crack one egg into a small bowl and then carefully transfer the egg into one of the prepared avocado halves. Place the filled avocado onto the prepared baking sheet and repeat this process with the remaining avocado halves and eggs. Season each with salt and black pepper, to taste.
Place filled avocado halves in pre-heated oven to bake for 20-25 minutes, or until the eggs are cooked according to your preference.
Remove from oven and top each avocado half with shredded Cheddar Jack cheese and crispy bacon pieces. Garnish with chives or sliced green onions, if desired, and serve immediately.
