Quick and easy is my go to when we are running around like crazy trying to get everything done. With 4 kids, homeschooling and working from home crazy is something that is normal in our house. Sheet pan dinners have always been something I have loved. I chop up the ingredients, pop them on a baking sheet and then bake in the oven. Super simple and the clean up is super easy.

Tips for Making this recipe
Use green bell peppers. It is important to note that red and yellow peppers have higher amount of carbs than the green bell peppers. Personally, I grab what is on sale or what I am in the mood for and the few extra carbs in the red and yellow ones are ok with me. If you are strict on your carb counts then you will want to stick with using green bell peppers.
Use a rimmed baking sheet. In order to keep all of the fajita ingredients from falling off the pan use a rimmed baking sheet.
Even layer. When you place the chicken and veggies on the baking sheet keep them in a single layer on the baking sheet for even cooking.
Skip fajita seasoning mix. Packaged mixes have additives in them, so for this recipe, we use individual spices combined to make our own fajita seasoning.

Peppers. I like using a variety of colored peppers and use yellow peppers, orange peppers, red bell pepper, and green peppers. If you are looking to keep the carbs as low as possible stick with using only green peppers.
Onions. I like using red onions, but you can also use white onions or yellow onion in this easy recipe.
Boneless skinless chicken breasts. I like using boneless skinless chicken breasts, but you can also use chicken tenders or chicken breasts. The important part is that the chicken is sliced into thin slices.
Spices. I prefer to use a combination of spices instead of a prepackaged packet. For this recipe you will need Chili powder, cumin, dried oregano, garlic powder, onion powder, paprika, salt, and black pepper.
Olive Oil. Olive oil helps the seasonings stick to the chicken and vegetables, it also helps keep everything from sticking to the baking sheet when it is baking. You can also use avocado oil.
How to make Low Carb Sheet Pan Chicken Fajitas
Preheat oven to 400°F.
Wash and slice the peppers, onions.
Cut the boneless skinless chicken breast into thin strips.
Place the peppers, onion, and chicken onto a large sheet pan and drizzle the olive oil over the mixture and stir well to coat everything with the olive oil.
Sprinkle all of the seasonings on top of the peppers, onions, and chicken, and stir until everything is well coated.
Bake in the oven for 10 minutes and then stir everything.
Place the sheet pan back in the oven for an additional 10 minutes or until the chicken has reached an internal temperature of 160°F.

- 1 yellow pepper sliced
- 1 red pepper sliced
- 1 orange pepper sliced
- 1 red onion sliced
- 1 pound chicken breast sliced
- 2 tablespoons olive oil
- 1 tablespoon chili powder
- 1 tablespoon cumin
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- Salt to taste
- pepper to taste
Instructions
- Preheat oven to 400°F.
