I can not tell you how many times over the last few weeks I have been standing in the kitchen thinking to myself, “what am I going to make for dinner” because while I meal planned the week out someone in the house thought certain ingredients would be a tasty snack.

We all love spinach in my house, but the kids only like it if it cooked, so spinach stuffed chicken is perfect because I know the raw spinach will be left alone until I use it to make dinner.

What is the best dish for cooking this in?
I like to cook this dish in my cast iron skillet because I can use it in the oven or on the stove top and I like how easy the clean up is. If you do not have a cast iron skillet you can use a glass baking dish.
Can I used Frozen Spinach?
While I prefer to use fresh spinach you can use frozen. If you are going to use frozen spinach be sure to thaw it completely and squeeze out the liquid.
What temperature is stuffed chicken done?
When you are baking stuffed chicken you will know it is thoroughly cooked when the internal temperature reachers 165 ºF. When you are checking the internal temperature of stuffed chicken make sure you are putting the thermometer in to the chicken and not into the cheese and spinach mixture that is stuffed in the chicken to get the accurate temperature.
Can I make this ahead of time?
You can prep this healthy spinach and cheese stuffed chicken ahead of time, just make the filling, stuff the chicken and then wrap tightly in plastic wrap and store in the fridge for 1-2 days.
How to Freeze Spinach and Cheese Stuffed Chicken
If you are wanting to meal prep and have chicken freezer meals you can easily with this low carb stuffed chicken recipe. Follow the recipe directions until the baking step. Then line a baking sheet with parchment paper or tin foil and spray with nonstick spray. Place the chicken breasts on the baking sheet and put in the freezer until they are fully frozen. Remove from the baking sheet and put them into a freezer bag once they are frozen solid.
To cook from frozen you can thaw them over night or stick them in the oven in a baking dish while still frozen, you will just need to make the bake time longer.
Spinach Stuffed Chicken Ingredients
- 1 pound chicken breast
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 4 ounces cream cheese, softened
- 1/4 cup parmesan cheese, grated
- 1 tablespoon mayonnaise
- 2 cup chopped spinach
- 2 cloves garlic, minced
How to Make Spinach Stuffed Chicken
Preheat the oven to 375°F.
Wash and chop the spinach leaves. Grate the parmesan cheese if needed into a bowl and set aside.
In a small bowl mix together the cream cheese, parmesan cheese, mayonnaise, spinach, and garlic, set it aside.
Slice a pocket in each chicken breast, making sure not to go all the way through the chicken breast.
Drizzle the olive oil over the chicken.
In a small bowl mix the paprika, salt, garlic, and onion powder togeather. Sprinkle the paprika, salt, garlic, and onion powder mixture on top of the chicken breast and rub the spice mixture over both sides of the chicken.
Take the spinach mixture and stuff it into the holes of the chicken breast.
Place the chicken in a baking dish. Bake for 25-30 minutes or until the chicken reaches 165°F.
