Feta and Tomato Spaghetti Squash. Creamy feta cheese, oven roasted tomatoes and spices mixed with spaghetti squash for the best low carb feta and tomato dish! It’s so good no one will even realize it is good for them to eat!
Cut Spaghetti Squash in half and remove seeds. Place cut-side down on lined baking dish and cook for 30-40 minutes until the squash "gives" when you squeeze on the outside
Place a brick of feta in the middle of a pan, surround the cheese with tomatoes and garlic. Drizzle with olive oil, Italian seasoning, salt, and pepper. Stir to coat evenly.
Cook for 30 minutes until tomatoes blister over.
Peel the outer skins of garlic and use a fork to mash everything together. Scrape the spaghetti squash to create strands that look like noodles.
Add "noodles" to pan and stir until everything is well combined. Stir in basil and enjoy!
