Move over pepperoni pizza, there's a new kid in town and its name is zucchini pizza bites. These little guys are perfect for a quick and easy keto snack or appetizer. They're also great for satisfying your pizza cravings without all the guilt.
1/2cupHomemade Pasta Sauce or your favorite low carb jar variety
1/2cupMozzarella Cheese
2teaspoonsolive oil
2zucchinis
Salt to taste
Pepper to taste
Instructions
Wash your Zucchini and then cut into 1/4 inch slices (if they are not perfect don't worry they just need to be thin enough to cook quickly and thick enough that you can hold them without them flopping.
Once sliced, add to a large bowl, drizzle a little olive oil (just enough to help coat them) and sprinkle a small amount of salt and pepper on them. Mix well so they are all coated.Get a baking sheet and line with a silicone baking mat or aluminum foil, place your slices on the tray.
Bake at 350 for 3-4 minutes, then remove the tray and flip them over.
Put back in the oven for another 2 minutes.
Remove again and put a small amount of pasta sauce on top, sprinkle mozzarella cheese on them and put back in the oven for 3-4 minutes until the cheese is melted.
